Dish Apple Pancake (E)
1 C granulated erythritol
1 tsp cinnamon
2 C chopped apple
1-1/2 C
oat flour
1/2 C oat fiber
2 Tb THM Sweet Blend or 1/4 C Truvia
1 Tb + 1 tsp baking powder
Pinch of salt
1 carton
(2 cups) liquid egg whites
2 C lowfat cottage cheese
Preheat
oven to 350 degrees. Lightly
spray a 9"x13" pan with coconut oil spray and set
aside.
In a
large bowl, combine erythritol and cinnamon; add chopped apple
and toss well until all pieces are coated.
Transfer apple mixture to a smaller bowl, and set aside.
In large
bowl again, combine next 5 dry ingredients; set aside.
In a
blender, blend egg whites and cottage cheese until smooth.
Pour into large bowl with dry ingredients, and mix
quickly as the baking powder will start to puff it up.
When fully combined (a few lumps are okay), put the
mixture into the sprayed pan and smooth out evenly.
Scatter
the apple mixture evenly over the top, and bake 25-30 minutes,
or until fully puffed in the middle.
Makes 6 servings.
